Beauty in a pot: Bijin Nabe by Tsukada Nojo

Beauty comes from within, as cliche as it may sound, but this is true if you really want lasting effect on your skin. Bijin Nabe by Tsukada Nojo became popular in Japan and Singapore because of its Signature Golden Chicken Collagen Stock. The stock is made from Jidori chicken which is stewed for 8 hours until all Jidori chicken bones are fully dissolved, slowly turning into a smooth and silky collagen pudding.

It was an honor to be one of the first to try this unique Beauty Collagen Hot Pot at the the 2nd Level of S Maison Mall in Conrad Manila.

We were served appetizers while waiting for the main course. I love this Romaine Caesar Salad with Shio Kombu or salted seaweed. It’s light and refreshing.

Next is this Maximum Fried Eggplant, I never thought that an eggplant can be cooked just like french fries, the coating is just right to give flavor to the eggplant.

My favorite is this Chicken Nanban, a specialty from Miyazaki prefecture in Japan. It’s made of juicy chunks of boneless chicken topped with creamy tartar sauce with egg.

Now for the star of the show, chicken collagen. I expected the collagen stock to be in liquid form but they will bring it to your table in its jelly like form. You will witness on your table how it melts.

After it has melted, you will be given a sample of the stock and chicken in its unadulterated state, meaning no seasoning and other flavors added.

Personally, I prefer the clean and simple taste of just the chicken collagen stock, I think I can down 2 or more cups of this stock. If you’re eating the chicken, you can also try mixing the different sauces and play with the flavors. Choose from Shoyu, Leek Oil, Yuzukosho, and the spicy Layu sauce.

The tsukene or chicken meatballs and organic vegetables are then added to the remaining melted collagen stock. The different taste of vegetables will then lend its sweet flavors to the stock.

Aside from bringing more flavor, it also makes your hot pot so pretty and colorful.

The shrimp is the last one to be added so that it won’t mix with the flavors of the vegetables. Now that the meat, vegetables, and seafood, are finished, a new collagen stock was brought out and boiled. You now have a choice of noodles or rice to be added in the stock.

We were served a rice porridge made tastier with an organic egg.

The Golden Chicken Collagen Chicken Soup set is Php 750 and is good for 2 persons.

Another dish that you must try is the Nikumaki Onigiri which are rice balls wrapped in bacon and baked with special soy sauce.

I think this Japanese beauty hot pot will also be a hit just like in Japan and Singapore. After all, we try anything just to look good and we appreciate delicious and healthy food.

  29. I remember eating a Chinese dish in Singapore similar to your Maximum Fried Eggplant in your photo. It was crispy and tastes like a melting pork meat.
